Mile High Meatloaf Burger
A meatloaf patty grilled to order and topped with creamy cheddar and chive mashed potatoes, fried onion rings and a brown gravy mayonnaise.

Brown Gravy Mayonnaise
Cheddar and Chive Mashed Potatoes

Heavy cream, warm 0.5 cup

Chives, chopped 0.5 cup

Cheddar Cheese, shredded 0.5 cup

Mashed potatoes, prepared 1.5 lbs
Prepare the Meatloaf

Onion, medium, small dice 1.0 each

Parsley, fresh, chopped 0.5 cup

Smoked paprika 3.0 Tbsp

Ketchup 0.5 cup

Italian seasoning 2.0 Tbsp

Seasoning (salt+ pepper)

Granulated garlic 2.0 Tbsp

Worchestershire sauce 1.0 Tbsp

Thyme, fresh, chopped 1.5 Tbsp

Panko bread crumbs 0.8 cup

Beef, ground, 80/20 3.0 lbs
Assemble the Burger

Brown gravy mayonnaise, prepared 10.0 oz

Cheddar and chive mashed potatoes, prepared 20.0 oz
-
Onion rings, fried 20.0 each

Texas toast, toasted 20.0 slices

Meatloaf patties, prepared 10.0 each
Preparation

Brown Gravy Mayonnaise
- Combine all ingredients and whisk until well combined. Hold refrigerated until service.

Cheddar and Chive Mashed Potatoes
- Fold in heavy whipping cream, chives and cheddar cheese to the prepared mashed potatoes. Hold hot for service.

Prepare the Meatloaf
- Combine all ingredients and form into a loaf. Bake at 350F for 1 hour. Set aside and cool.
- For service, cut the loaf in 10 slices.
- Cook each slice to order on a griddle.

Assemble the Burger
- Spread the brown gravy mayonnaise on each piece of toast. Add the griddled meatloaf patty, top with 2 oz. cheddar and chive mashed potatoes and 2 fried onion rings.
