Prepare the Lemon Gin Mayonnaise

Prepare the Onion Jam

  • Sweet onion, julienne 2 each
  • Vegetable oil 2 Tbsp
  • Sherry 0.25 cup
  • Apple cider vinegar 0.25 cup
  • Sugar 0.25 cup
  • Dijon mustard 2 Tbsp
  • Butter, unsalted 1 Tbsp

Prepare the Burger Patties

  • Ground turkey 3.75 lbs
  • Italian seasoning 3 Tbsp
  • Salt, kosher 2.5 tsp

Prepare the Sliders

  • Ground Turkey Patties, prepared 30 each
  • Lemon Gin Mayonnaise, prepared 1.5 cups
  • Pretzel slider buns, toasted 30 each
  • Spinach 4 oz
  • Bacon, cooked 30 slices
  • Onion Jam, prepared 2 cups
  • Goat Cheese 2 cups
  • Tomato 30 slices
  1. Prepare the Lemon Gin Mayonnaise

    • Combine gin, lemon zest and juice in pan and cook off alcohol, reducing to 3 oz.
    • Combine gin and lemon mixture with Hellmann's® Real Mayonnaise and tarragon. Chill until use.
  2. Prepare the Onion Jam

    • Cook onions in oil for 20 minutes, stirring often.
    • Add remaining ingredients except butter and allow to thicken for additional 10 minutes.
    • Remove from heat, add butter, and stir until melted. Set aside.
  3. Prepare the Burger Patties

    • Combine all ingredients and mix well.
    • Form 30 (2 oz.) patties and chill until use.
  4. Prepare the Sliders

    • Cook burgers until the internal temperature reaches 165° F.
    • Spread Lemon Gin Mayonnaise on both sides of buns.
    • Build burgers with remaining ingredients.
