Prepare the Zesty Manuka Honey Aioli
- Toss the onion and garlic with EVOO and roast at 450°F / 230°C until soft and nicely charred (not burnt), then cool slightly.
- Blend the roasted onion-garlic, roasted sweet peppers, and mayonnaise until completely smooth.
- Taste and adjust with a touch more mayo or peppers if needed.
- Cover and refrigerate at least 30 minutes before serving.
