Prepare the Romesco Aioli
- Blend the piquillo peppers and Marcona almonds until smooth (leave a slight texture if preferred).
- Transfer to a bowl and whisk in the Real Mayonnaise and Chipotle Aioli until fully uniform.
- Fold in the grated Manchego and mix until evenly distributed.
- Taste and adjust with a touch more mayo for softness or peppers for extra sweetness if needed.
- Cover and refrigerate at least 30 minutes before serving.
