Prepare the Hogao Aioli

  • Hellmann’s Real or Extra Heavy Mayonnaise 3.0 cups
  • Scallions, chopped 1.0 cup
  • Garlic cloves, minced 2.0 each
  • Diced tomatoes 2.0 cups
  • Cumin, ground 1.0 tsp
  • pepper,ground 0.5 tsp
  • Salt 1.0 tsp
  • Vegetable oil 1.0 Tbsp

Preparation

  1. Prepare the Hogao Aioli

    1. In a small saucepan, cook the scallions, garlic, tomatoes, cumin, pepper, salt, and vegetable oil over low heat until the tomato liquid reduces and the mixture slightly thickens (about 15 min).
    2. Let the hogao base cool to room temperature.
    3. Whisk the cooled hogao into the mayonnaise until completely uniform.
    4. Taste and adjust seasoning if needed.
    5. Cover and refrigerate at least 30 minutes before serving.
