Prepare Pita Croutons

Pita, cut into bite sized pieces 5 each

Olive oil, as needed

Zaatar, as needed
Finish the Salad

Whole wheat couscous, cooked 10 cups

Chopped cilantro 1 cup

Parsley, chopped 1 cup

Cucumber, medium dice 2.5 cups

Blood orange, thin sliced, grilled, quartered 2.5 cups

Avocado, medium, large dice 5 each

Preserved lemon, prepared for garnish

Pita Croutons, prepared 5 cups

Creamy Orange and Za’atar Dressing, prepared 15 oz
Preparation

Prepare Creamy Orange and Za’atar Dressing
- Combine all ingredients and whisk.
- Yield: 3 qts

Prepare Pita Croutons
- Toss pita with oil and season with za’atar. Bake in a 400°F for 5 minutes or until crisp. Cool and store.
- Yield: 5 cups

Finish the Salad
- Combine couscous with prepared dressing, za’atar, herbs and cucumber. Top with remaining ingredients and drizzle with additional dressing.
