Step 1:

  • Mussels, cleaned in shell 20 piece
  • Clams, cleaned in shell 20 piece

Step 2:

  • Olive oil, as needed
  • Chicken, boneless, cubed 1.5 lbs
  • Chorizo (or hot Italian sausage, cooked) 1 ea
  • Pork, cubed 1 lb

  • Chicken, boneless, cubed
  • Clams, cleaned in shell

Step 5:

  • Scallops, 40-60, peeled, deveined 0.75 lb
  • Shrimp, 25-30, peeled, deveined 0.75 lb
  • White fish (monk, halibut) 0.5 lb
  • Mussels, cleaned in shell
  • Peas, cooked 1 cup
  1. Step 1:

    Scrub mussels and clams, remove all beards and barnacles. Set aside.
  2. Step 2:

    Heat olive oil and brown chicken, chorizo and pork. Remove and set aside. Slice chorizo.
  3. Step 3:

    Adding more olive oil if necessary, sauté onions, and garlic until onions are transparent. Add tomatoes, prepared Knorr® CALDO DE POLLO, saffron, parsley, bay leaf, red crushed pepper and black pepper. Simmer for 15 minutes.
  4. Step 4:

    Add chorizo, chicken mixture and clams and cook until clams begin to open.
  5. Step 5:

    Add scallops, shrimps, whitefish and mussels. Cook until mussels are open. Add peas and heat through.
  6. Step 6:

    Serve with plenty of good crusty Italian or French bread or pancitos criollos.
