Prepare Burger Buns

  • Wheat Flour 22 oz
  • Dry Yeast 1 T
  • Sugar 1.5 oz
  • Salt 1 T
  • Buttermilk 1 cup
  • Eggs 1 each
  • Egg yolk 1 each
  • Butter 3 T
  • Sesame and poppy seed

Prepare Burger Patties

  • Red Onions, medium 2 each
  • Garlic 4 cl
  • Green Zucchini 10 oz
  • Yellow Zucchini 10 oz
  • Tofu 1 lb
  • Chickpeas 10 oz
  • Flat Parsley 1 oz

Prepare Tomato Relish

  • Red Onions, medium 1 each
  • Red chili pepper 1 each
  • Cherry Tomato, Red 8 oz
  • Sherry Vinegar 1 oz
  • Basil 2 leaf
  • Cherry Tomato, Yellow 8 oz

Prepare the Sauce

  • Hellmann's® Real Mayonnaise 0.5 cup
  • Whole Grain Mustard 0.5 oz
  • Dijon mustard 0.5 oz

Prepare the Burger

  • Burger Buns, prepared 10 each
  • Burger Patties, prepared 10 each
  • Tomato Relish, prepared
  • Sauce, prepared
  1. Prepare Burger Buns

    • Mix the flour, sugar, yeast and salt in a mixer. Add, while mixing, the butter milk, whole egg, yolk and soft butter. Keep the egg white for finishing.
    • Knead the dough until elastic and smooth and make one large ball, put in a large bowl and cover with a moist kitchen cloth. Let it rise for 1.5 hour.
    • Divide the dough into small balls of approx. 3 oz. (90g) and let it rise for 30 - 40 minutes. Brush the egg white on top of the small balls and sprinkle with some sesame and poppy seed. Bake in oven for 15 minutes on 365 F (185 C).
  2. Prepare Burger Patties

    • Sweat the finely chopped onion and garlic in olive oil. Add the finely chopped zucchini and tofu, fry till most of the moist is evaporated, let it cool down.
    • Blend a puree from the chick peas and mix with the vegetable base, season with salt, pepper, olive oil and finely chopped parsley.
    • Transfer the mass into a round mold to make a firm burger patty of approx. 3.5 oz. (100g).
  3. Prepare Tomato Relish

    • Sweat finely chopped onion and chili. Cut tomatoes in half and add in the hot pan. Pour in the sherry vinegar and season with a chiffonade of basil, pepper and salt. Let it cool down.
  4. Prepare the Sauce

    • Mix mayonnaise with the fine and whole grain mustard.
  5. Prepare the Burger

    • Put the tofu burger in the oven. Slice the burger bun open and grill cut side down on a skillet. Put the burger together with tomato relish, tofu burger and top it with the mustard mayonnaise and salad.
