Prepare the Zucchini Casserole

  • zucchinis large (sliced) 4.0 pieces
  • Hellmann's® Real Mayonnaise 1.5 cups
  • Cheddar Cheese, shredded 2.0 cups
  • Eggs, large 2.0 n/a
  • Flour 2.0 Tbsp
  • Garlic powder 2.0 tsp
  • Onion powder 2.0 tsp
  • Salt 1.0 tsp
  • Red pepper flakes 0.5 tsp
  • Black Pepper 1.0 tsp
  • crackers 0.5 cup
  • Panko breadcrumbs 4.0 Tbsp
  • Cheddar Cheese, shredded 4.0 Tbsp
  • Cheese, Mozzarella, shredded 4.0 Tbsp
  • Butter melted 4.0 Tbsp

Give a fall-favorite vegetable new life with a cozy side dish that comes together quickly and extends the life of nearly overripe zucchini. Simply combine ingredients, bake and wow.



  1. Prepare the Zucchini Casserole

    • Preheat the oven to 350 degrees.
    • Slice zucchini and blanch in boiling water for 30 seconds then drain and squeeze out any excess moisture.
    • In a bowl, combine mayonnaise, shredded cheddar cheese, egg and seasonings. Then combine with blanched zucchini.
    • Place in a greased half hotel pan.
    • Combine crackers, panko breadcrumbs, shredded cheddar cheese, shredded mozzarella and melted butter. Add an even layer to the top of the casserole.
    • Place in the oven and bake for 40 to 45 minutes or until golden and bubbling.
    • Chill thoroughly before cutting into portions.
