Preparation

  1. Eggs

    1. Slice the eggs in half lengthwise and carefully remove the yolks. Reserve the whites on a tray.
    2. Sprinkle the whites with a little salt and drizzle with olive oil.
  2. Filling

    1. In a bowl, combine the yolks, Hellmann’s Real Mayonnaise, champagne vinegar, Dijon mustard, chili paste and fresh herbs.
    2. Whisk until smooth and creamy.
    3. Fold in the toasted pistachios.
    4. Season to taste with additional salt and acid, if needed.
  3. To Assemble

    1. Spoon or pipe the yolk mixture into the reserved egg whites.
    2. Garnish with crispy shallots, sesame seeds and a drizzle of sesame oil.
    3. Serve immediately or refrigerate until ready to enjoy.
