Prepare Tropical Thai Dressing

Prepare Tropical Roasted Pork Marinade

  • Mexican oregano 2 cups
  • Garlic, minced 1.25 cups
  • Onion Powder 0.25 cup
  • Cumin 0.5 cup
  • Chipotle powder 0.5 cup
  • Chili powder 0.5 cup
  • Pineapple Juice 5 cups
  • Mustard powder 0.25 cup
  • Mexican cinnamon 1 Tbsp
  • Lime juice, fresh 1.25 cups

Prepare Tropical Roasted Pork

  • Tropical Pulled Pork Marinade, prepared
  • Boneless pork butt, cut into 2 in. pieces 8 lbs

Finish the Salad

  • Tropical Thai Dressing, prepared 10 oz
  • Brown rice, prepared 5 cups
  • Quinoa, cooked 2.5 cups
  • Cilantro leaves 0.5 cup
  • Lime juice, fresh 0.5 cup
  • Garlic, minced 2 tsp
  • Salt – to taste
  • Tropical Roasted Pork, prepared 20 oz
  • Tomatoes, small dice 2.5 cups
  • Pineapple, charred, small dice 2.5 cups
  • Red Onion, diced 0.25 cup
  1. Prepare Tropical Thai Dressing

    • Combine ingredients and whisk to prepare 2 quarts of dressing.
  2. Prepare Tropical Roasted Pork Marinade

    • Combine all ingredients to prepare 2 quarts of marinade.
  3. Prepare Tropical Roasted Pork

    • Rub Tropical Pulled Pork Marinade into the pieces of boneless pork butt and let marinate overnight. Place pork butt pieces in a stock pot, cover with lid and cook at 300°F oven until tender.
    • Yield: Approximately 6 lbs.
  4. Finish the Salad

    • Combine the Tropical Thai Dressing, brown rice, quinoa, cilantro leaves, lime juice, garlic and salt, top with remaining components.
