Tabbouleh and Herb Salad
Traditional tabbouleh with quinoa, cherry tomatoes, avocado and cilantro adding flavor and texture. Topped with creamy Ranch dressing blended with cucumber and lemon zest.

Prepare Cucumber Ranch Dressing

Cucumber, seedless, peeled, small dice 2.5 cups

Lemon Zest, as needed
Finish the Salad

Quinoa, cooked 3.0 cups

Bulgur, cooked 7.0 cups

Parsley, chopped 1.0 cup

Chopped cilantro 1.0 cup

Cherry Tomato, small dice 2.5 cups

Avocado, sliced 3.0 each

Cucumber Ranch Dressing, prepared 15.0 oz
Preparation

Prepare Cucumber Ranch Dressing
- Combine all ingredients in a food processor and blend until smooth.
- Yield: approximately 2.5 qt.

Finish the Salad
- Combine grains, herbs, tomato, cucumber and mix together. Top with remaining ingredients. Drizzle with Cucumber Ranch Dressing.
