Spicy Salmon ‘Sushi’ Bowl

Prepare Sushi Rice

Sushi rice (uncooked) 1.0 cup

Sesame oil 0.75 t.

Salmon filets, 4 oz 4.0 each
Assemble the Bowl

Avocado, sliced 1.0 each

Cucumber, seedless, sliced lengthwise 1.0 cup

Carrots, shredded 0.5 cups

Scallions, sliced 0.25 cup
Serve the Bowl

Salted seaweed 0.35 oz
Preparation

Prepare Sushi Rice
Preheat oven to 400F. Prepare sushi rice according to package directions. -
Prepare Bowl Contents
Combine Hellmann’s Spicy Mayo and sesame oil until well blended. Place salmon on parchment paper-lined baking sheet. Evenly spread about 1 Tbsp. of spicy mayo mixture on top of each piece of salmon. Roast in oven 15 minutes or until salmon is thoroughly cooked. -
Assemble the Bowl
To assemble the Bowls, divide cooked rice between 4 separate individual bowls. Evenly top each with a cooked spicy salmon filet, sliced avocado, cucumber slices, shredded carrots and chopped scallions. -
Serve the Bowl
Serve with additional Spicy Mayo sauce, seaweed squares and garnish, if desired, with toasted sesame seeds.
