Prepare the mushrooms

  • Miatake mushrooms, cleaned, large clusters 3.0 pieces
  • Soy sauce 0.25 cup
  • Mirin wine 0.25 cup
  • Sake 0.25 cup
  • Oil 1.0 Tbsp

Assemble bao buns

Preparation

  1. Prepare the mushrooms

    30 minutes
    • Heat oven to 400 with an oven safe pan inside.
    • In a small bowl, mix soy sauce, mirin, and sake together. Set aside.
    • Once oven is heated, remove the pan and add in oil and mushrooms. Bake for 20-30 minutes, depending on size. During the last 5-8 minutes, add the soy mixture and roast until close to dry.
    • Transfer to bao to holding pan. 
  2. Assemble bao buns

    10 minutes
    • Steam bao buns until soft, about 4-5 minutes.
    • Prepare garlic and miso aioli by adding Hellman's Vegan Mayonaise, garlic, and miso paste to a food processor. Blend until smooth.
    • Spread hoisin lightly on inside of each bun. Add mushrooms, wakame, and cucumber. Top with garlic and miso aioli sauce. Serve immediately.
