  • Corn tortillas 20.0 each
  • Cilantro leaves 1.0 bunch
  • Blue cheese, crumbled 1.0 oz
  • Red onion, finely diced 1.0 oz

These tacos are the perfect fusion of bold and spicy flavors, featuring shredded buffalo chicken and tangy blue cheese. Ideal for a casual dining menu.



  1. Preparing the chicken

    20 minutes
    • Season chicken with salt and pepper. Add to a wide bottom pot or pan. You can overlap the chicken, if needed. Add enough prepared chicken stock to cover the chicken by 1 inch.
    • Bring the water to a boil over high heat, then reduce the heat to low and let the chicken simmer until it reaches an internal temperature of 165F or is no longer pink in the center, about 12-15 minutes.
    • Shred chicken with a stand mixer. Combine with buffalo sauce.
  2. Assembling the tacos

    10 minutes
    • Warm corn tortillas on a skillet for 10-15 seconds on each side. Alternatively, you can microwave all tortillas in a stack between a damp towel for 30 seconds.
    • Add shredded buffalo chicken to each tortilla. Top with cilantro, red onion, and crumbled blue cheese.
    TIP: Serve alongside carrot and celery sticks with a ranch dipping sauce.
