- Combine all the salsa ingredients in a small bowl and set aside.

- Combine all the chipotle-lime crema ingredients in a small bowl and set aside.
Cooking the pizza
30 minutes
- In a blender, combine the chipotle pepper in adobo sauce, tomato, and salt, and blend until a smooth sauce forms.
- Preheat the oven to 450°F with a pizza stone inside. On a large piece of parchment paper, roll out the dough into a 16-inch round. Top with the chipotle-tomato sauce, diced chicken, red onion, and Monterey Jack cheese. Drizzle with a bit of oil, especially on the crust.
- Carefully slide the parchment paper with the pizza onto the heated pizza stone and bake for 15-17 minutes, or until the crust is crispy and browned, and the cheese is melted and slightly browned.
