Preparation

  1. Wings


    1. Season the wings with coriander, cumin, pepper and salt. Place them on a rack or tray and refrigerate overnight, uncovered.
    2. Preheat oven to 325°F. Bake the wings for 30 minutes, until they begin to pull apart at the joint.
    3. Raise the oven temperature to 450°F and bake for another 10 minutes, until crispy and browned.
    4. For added spice, toss the wings in a mix of hot sauce and melted butter, or sprinkle with cayenne pepper.
  2. Roasted Garlic Bleu Cheese Dip


    1. In a bowl, combine bleu cheese, Hellmann’s, yogurt or sour cream, roasted garlic, horseradish and lemon juice.
    2. Mix until smooth and creamy. Taste and adjust seasoning with salt, pepper and more lemon juice if needed.
    3. Stir in fresh herbs. This dip can be made a day ahead and stored in an airtight container.
  3. To Serve

    1. Arrange the hot, crispy wings on a platter.
    2. Serve with the roasted garlic bleu cheese dip on the side.
