Prepare the Citrus Dressing

  • Knorr® Professional Intense Flavors Citrus Fresh 4 x 13.5 oz 3.0 Tbsp
  • Lemons, juiced 1.0 each
  • Powdered sugar 2.0 Tbsp
  • Grapeseed oil 0.25 cup
  • Salt, to taste

Prepare the Corn Salad

  • Corn, shucked 3.0 each
  • Green bell pepper, finely dice 1.0 each
  • Grape tomatoes, halved 10.0 oz
  • Radish, sliced into batons 0.5 cup
  • Scallions, thinly sliced 0.5 cup
  • Cilantro, finely chopped 1.0 Tbsp
  • Flat-leaf parsley, finely chopped 1.0 Tbsp
  • Ginger, minced 1.0 Tbsp

Prepare the Roasted Garlic Hollandaise

Prepare the Artic Char

  • Artic Char or salmon, deboned, skin on, cut in 4 oz filets 2.0 lbs
  • Butter 2.0 Tbsp
  • Salt and Pepper, to taste

Buttery seared Artic char served with a light and fresh corn salad with tomatoes, radishes, scallions and ginger, tossed in a sweet and tangy citrus dressing.  Finished with a warm roasted garlic hollandaise sauce.



  1. Prepare the Citrus Dressing

    • Whisk together all ingredients in a bowl.
  2. Prepare the Corn Salad

    • Combine all ingredients in a bowl. Toss with Citrus Dressing and set aside.
  3. Prepare the Roasted Garlic Hollandaise

    • Combine the prepared Knorr Hollandaise with roasted garlic powder and theKnorr® Ultimate Intense Flavors Citrus Fresh. Keep warm.
  4. Prepare the Artic Char

    • Heat a large skillet with butter over high heat. Sear the fish, skin side down over medium heat. Flip and after 30 seconds turn off the heat. Remove fish and transfer to rack.
  5. Finish the Dish

    • Spoon 1 oz of roasted garlic hollandaise on the plate, then top with fish and the citrus corn salad.
