Tofu Zucchini Burger with Mustard Mayonnaise
A tasty burger full of veggies with a sweet and sour tomato relish combined with a sauce made with Hellmann's® Heavy Duty Vegan Mayo and Maille.

Prepare Burger Patties

Red Onions, medium 1.0 each

Garlic 4.0 cloves

Green Zucchini 10.0 oz

Yellow Zucchini 10.0 oz

Tofu 1.0 lb

Olive oil, as needed

Chickpeas 10.0 oz

Salt and Pepper, to taste

Flat-leaf parsley, finely chopped 2.0 Tbsp
Prepare Tomato Relish

Red chili pepper 1.0 each

Cherry tomato, red, halved 8.0 oz

Sherry Vinegar 1.0 oz

Cherry tomato, yellow, halved 8.0 oz

Basil chiffonade 1.0 Tbsp
Prepare the Mustard Mayonnaise
Prepare the Burger

Burger Buns 10.0 each

Burger Patties, prepared 10.0 each

Tomato Relish, prepared

Mustard Mayonnaise, prepared

Mixed greens 2.0 cups
Preparation

Prepare Burger Patties
- Finely chop the onion, garlic, zucchini and tofu.
- Sweat the onion and garlic in olive oil. Add the zucchini and tofu, sauté until most of the moister is evaporated, then allow the mixture to cool.
- Puree the chickpeas and combine with the vegetable base, season with salt, pepper, olive oil and finely chopped parsley.
- Using a round mold, make 10 firm burger patties of approx. 3.5 oz. each.

Prepare Tomato Relish
- Finely chop the red onion and chili pepper.
- Sweat onion and chili. Add tomatoes to the hot pan.
- Add the sherry vinegar and basil, season with salt and pepper, allow to cool.

Prepare the Mustard Mayonnaise
- Mix Hellmann's® Heavy Duty Vegan Mayo with Maille Old Style and Maille Dijon Mustard.

Prepare the Burger
- Pan sear the burgers and finish in the oven. Warm the burger bun.
- Assemble the burger with prepared tomato relish, tofu burger and top it with the prepared mustard mayonnaise and mixed greens.
