Prepare the dish
- In a pot heat up the canola oil, add in the rice and begin to toast.
- Season with the Caldo de Vegetales and achiote powder.
- Add the water and let it come to a quick boil. Once it has started to boil turn the heat to low, and cover with a lid.
- Let the rice cook for 15 minutes.
- Once the rice has cooked, let it rest for 5 minutes with the lid on.
- Serve as a side with your favorite Mexican dishes. Enjoy!
