  • Nopalitos (Cooked Cactus/Can Product), drained 2.0 cups
  • Brown rice, cooked 2.0 cups
  • Corn cooked 1.0 cup
  • European Cucumber, sliced 1.0 cup
  • Lettuce, romaine sliced 2.0 cup
  • Roma tomatoes, diced 1.0 cup
  • Carrots shredded 0.5 cup
  • Cilantro leaves 0.25 cup

  1. Picadillo Prep

    • Sweat Onions & peppers with EVOO over a medium heat. Add the rest of the ingredients and cook for an additional 10 minutes. Now transfer mixture to a ½ sheet pan and cook at 425 F for an additional 10-12 min, or until evenly browned.
  2. Tangy-Creamy Tomato Vinaigrette

    • Combine all ingredients in a high-speed blender and puree for 45 seconds to 1 minute. Refrigerate and serve as a side condiment.
