Join Mai Pham on a visit to see her grandmother and aunt in the village of Quoi Son near the city of My Tho. Mai and her aunt prepare a Southern-style meal featuring water spinach seared with garlic over a brisk wood fire; puffy fire-roasted rice paper sheets; fluffy steamed rice from the local rice fields, and a rustic clay pot dish which Mai learnt from her aunt. The clay pot dish is classic comfort food in Vietnam; any type of meat, fish, seafood or tofu can be added, after which it is simmered very slowly for 30 minutes to 1 hour.
