Prepare the Cornbread

  • soy milk 4.0 cups
  • Lemon juice 4.0 Tbsp
  • Hellmann’s Vegan Mayonnaise 2.0 cups
  • Butter (Vegan - melted) 1.25 cups
  • Cornmeal 3.0 lbs
  • All-purpose flour 3.0 cups
  • Baking powder 2.0 Tbsp
  • Baking Soda 2.0 tsp
  • Salt 1.0 tsp
  • Butter Vegan
  • Honey Vegan
  • Maple syrup

  1. Prepare the Cornbread

    • Preheat the oven to 425 degrees and grease a half hotel pan.
    • Add soy milk and lemon juice to a bowl and let sit for 5 minutes to make vegan buttermilk.
    • In a large bowl, combine vegan buttermilk, vegan mayonnaise and melted vegan butter.
    • In a medium bowl, whisk together dry ingredients.
    • Add dry ingredients to wet ingredients and whisk. Let sit for 10 minutes.
    • Place in a half hotel pan and bake for 30 minutes or until cooked.
    • Cool and cut into portions.
