Prepare soup

This rich and creamy soup is perfect for chilly days, featuring tender potatoes, crispy bacon, and a generous helping of shredded cheddar cheese. 



  1. Prepare soup

    • Fry the bacon in a skillet over medium-high heat until crispy. Remove bacon and let excess oil drain off. Reserve a maximum of 1 Tbsp of the bacon fat from the pan and discard the remainder. Once the bacon has cooled, crumble it into small bits.
    • In a large pot, add the potatoes and prepared Knorr® Professional Ultimate Chicken Bouillon Base. Heat to boiling then reduce heat. Cook 10 minutes or until potatoes are very tender.
    • Meanwhile, in the same skillet used for the bacon, melt the butter over low heat. Add the reserved bacon fat, onion, and garlic. Cook for 3 minutes or until the onion is tender.
    • Slowly stir in the flour and cook for an additional 1-2 minutes. Gradually whisk in the milk and half-and-half. Continue to whisk until the mixture is smooth. Add the kosher salt, garlic salt, and pepper and simmer lightly until slightly thickened, about 5 minutes.
    • Reserve ¼ cup each of cheese and bacon for toppings. Mix in the remaining cheese, bacon, and sour cream, and then remove the pot from the heat. Place the potato pieces in the pot and break into smaller chunks. Serve hot with your choice of toppings, such as cheese, bacon, and chives.
    • TIP: Prepare a "potato bar" with fun toppings, such as Greek yogurt, steamed broccoli, herbs, and diced tomatoes to delight your guests.
