  • Cumin, ground 2.0 Tbsp

Prepare Sesame Honey Dressing

Finish the Salad

  • Sesame Honey Dressing, prepared 15.0 oz
  • Brussels sprouts, julienned 2.5 cups
  • Radicchio, shredded or torn 2.5 cups
  • Roasted red pepper strips, julienned 1.5 cups
  • Spice Roasted Cauliflower 3.0 lbs
  • Rice, wild, cooked 2.5 cups
  • Pickled onion 1.5 cups
  • Sunflower seeds, salted 1.0 cup

Roasted cauliflower is spiced with cumin and smoked paprika, tossed with Brussels sprouts, radicchio and roasted red peppers, then tossed in Sesame Honey Dressing. Garnished with pickled onions and salted sunflower seeds.

Preparation

  1. Prepare Spice Roasted Cauliflower

    • Combine spices. Drizzle cauliflower in olive oil and season with spice mixture. Roast in a 400°F oven until tender and slightly charred.
    • Yield: approx. 3 lbs.
  2. Prepare Sesame Honey Dressing

    • Combine ingredients and whisk to incorporate.
    • Yield: 15 oz
  3. Finish the Salad

    • Combine dressing with Brussels sprouts, radicchio, and roasted red pepper strips. Top with remaining ingredients.
