Prepare the tomatillos

  • Tomatillos, husked and quartered 4.0 pieces
  • White onion 1.0 each
  • Jalapeño Pepper 2.0 piece
  • Garlic cloves, peeled, whole 6.0 each
  • Olive oil 1.0 Tbsp
  • Cilantro leaves 0.5 bunch
  • Limes 2.0 each
  • Salt, to taste

  1. Prepare the tomatillos

    • Toss the tomatillos, white onion, jalapenos and garlic with olive oil.  Season with salt.  Char in a cast iron pan over high heat until all items are blistered.  Allow to cool.
    • Place the mayo in a blender.  Add the charred ingredients, along with the cilantro and lime juice.  Puree until smooth.
