Marinade ingredients

For the skewers:

  • Salmon fillet skin removed, cut into 1-inch cubes 2.5 lbs
  • Wooden skewers (soaked in water for 30 minutes) 20.0 each
  • Toasted Sesame seeds (for garnish) 2.0 Tbsp
  • Scallions, chopped (for garnish) 2.0 Tbsp
  • Grilled Pineapple wedges
  • Lime wedges (for serving)

These Miso-Glazed Salmon Skewers feature tender salmon cubes marinated in a flavorful blend of miso, mango pineapple dressing, and spices, grilled to perfection alongside pineapple wedges. Garnished with sesame seeds and scallions, and served with lime wedges, this dish is a light and delicious option during the sumemr grilling seaon.

Preparation

  1. Marinade ingredients

    1.  Prepare the Marinade:
    • In a bowl, whisk together miso paste, Hellmann’s Mango Pineapple Dressing mirin, sake, soy sauce, honey, sesame oil, ginger, garlic, and rice vinegar until smooth.
    • Marinate the Salmon:
    • Place the salmon cubes in a large bowl or ziplock bag and pour the marinade over them. Toss gently to coat.
    • Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  2. For the skewers:

    • 3. Assemble the Skewers: 
    • Thread 3-4 marinated salmon cubes onto each skewer and add pineapple in between pieces.
    • 4. Cook the Skewers:
    • Grill Method:Preheat a grill to medium-high heat. Lightly oil the grates and grill the skewers for 2-3 minutes per side, basting with extra marinade.
    • 5. Garnish & Serve:
    • Sprinkle with sesame seeds and chopped scallions. Serve hot with lime wedges.
