Prepare Soft Scramble

Eggs, large 24 each

Milk, fresh 1 cup

Salt, kosher 1 Tbsp

Prepare the Corned Beef Hash

Olive oil 0.25 cup
Finish the Dish

Corn tortillas 20 each

Cilantro leaves, as needed

Salsa, as needed
Preparation

Prepare Soft Scramble
- Crack eggs into a blender, along with milk, salt and pepper. Mix for 30-45 seconds, or until mix is well incorporated.
- Cook eggs over a medium fire, using a large non-stick pan and a non-stick spatula. Hold cooked eggs covered on a half hotel pan for service.

Prepare the Corned Beef Hash
- Pre heat a large non-stick pan over a medium-high fire, add olive oil and spread the Corned Beef Hash evenly on the pan.
- Cook for 2-3 minutes on each side, so that a good crust/browning is achieved. Hold Corned Beef Hash on a ½ hotel pan for service.

Finish the Dish
- Warm the tortillas on a flat top or non-stick pan.
- Add soft scramble and Le Gout Corned Beef Hash using a 2 oz. / 55 g portion control spoon.
- Top tacos with Hollandaise sauce and fresh cilantro and/or salsa.
Note: For Delivery/ Pick up serve the sauce on the side.
