    • Peel watermelon cut into 1 ½ in by 3 in blocks

    • Place in vacuum Bag and seal under pressure

    • Peel and clean shrimp, split length wish and reserve

    • Cut julienne of green onions and place in Ice water and reserve

    • Pick Cilantro leaves and reserve

    • Blend Mayonnaise and Wasabi Paste, place in squeeze bottle

    • Marinate shrimp with a couple of ounces of Sesame Thai Vinaigrette

    • For plating place compressed melon on plate, place randomly 3 to4 pieces of marinated Shrimp on the plate, Drizzle with Sesame Thai Vinaigrette, drizzle with wasabi aioli garnish with green onions, cilantro and crisp shallots
