Preparing the soup

This hearty and comforting soup is packed with tender chicken, fresh veggies, and a flavorful broth. Served with crispy tortilla strips, crumbled cheese and sliced avocado, this soup is a crowd-pleaser for any occasion.



  1. Preparing the soup

    • Put chicken, 1.5 onions and garlic in a large pot. Add prepared Knorr® Professional Caldo de Pollo/Chicken Bouillon and bring to a boil. Reduce the heat to simmer and cook until the chicken is tender, about 1 hour.
    • When the chicken is tender, transfer to a cutting board and let rest for 5 minutes. Shred the meat, discarding the bones and the skin.
    • While the chicken is cooling, strain and reserve the stock, while discarding the solids. In a blender or food processer, add the chipotle, remaining onion, half of the cilantro, 1/2 cup tortilla strips, a sprinkle of salt, and 2 cups of stock. Puree until the mixture is as smooth as possible.
    • Pour the puree, remaining stock, and tomatoes back into the pot and bring to a boil. Reduce heat and simmer for 10 minutes. Stir in the shredded chicken and add salt to taste.
    • To serve, ladle the soup into the bowls and garnish with the fried tortilla strips, avocados, cheese, remaining cilantro, and jalapeno.
    TIP: Frozen corn and black beans can be added for extra flavor and a heartier soup.
