Prepare the soup

This traditional Vietnamese soup is a light and refreshing option that’s perfect for any menu. The tender meat, flavorful broth, and fresh vegetables make for a comforting and healthy bowl of soup.

  1. Prepare the soup

    40 minutes
    • Heat vegetable oil in a medium stockpot over medium heat. Cook shallots for 5 minutes, stirring often. Add minced garlic, ginger, and white parts of green onions. Stir and cook for another 1-2 minutes.
    • Pour in prepared Knorr® Professional Liquid Concentrated Base Beef and bring to a simmer. Add soy sauce, fish sauce, and 1-2 whole star anise to the broth. Cover and simmer for 15-20 minutes. Remove and discard the star anise.
    • Thinly slice the beef. Bring the broth to a boil and add the sliced raw meat, along with the onion rounds. Cook for 5 minutes stirring occasionally.
    • To serve, add cooked noodles to a bowl and top with the broth and meat mixture. Garnish with sprouts and basil. Optionally, you may also garnish with sliced red chilis, jalapeno, lime wedges, green onions, bok choy or additional sauce (hoisin or fish sauce).
TIP:Placing the beef in the freezer for 10 minutes will make it easier to slice thinly.
