Spring Ham, Asparagus and Shiitake Quiche with Tomato and Green Onion Hollandaise
Quiche is a great brunch option to showcase a variety of different ingredients. This decadent quiche, drizzled with Tomato and Green Onion Hollandaise, pairs well with a side salad with a simple vinaigrette.

Prepare the Quiche

Large eggs, beaten 2.0 each

Colby Jack cheese, shredded 0.75 cup

Ham, diced 0.75 cup

Asparagus, sliced and blanched 0.5 cup

Shiitake Mushrooms, diced and sautéed in bacon fat 0.5 cup
Prepare the Tomato and Green Onion Hollandaise

Tomatoes, seeded and diced fine 1.0 cup

Green onions, chopped 1.0 cup

Prepare the Quiche
- Combine eggs and mayonnaise and mix well.Addcheese, ham,asparagus and mushroomsand mix well.
- Place into unbaked pie crust. Bake at 425Ffor 10 minutes.Reduce heat to 350Fand cook an additional 15 minutes or until set and a knife inserted comes out clean.

Prepare the Tomato and Green Onion Hollandaise
- Combine all ingredients and hold warm.

- Slice the quiche into 8 slices. Serve warm, topped with 2 oz of Tomato and Green Onion Hollandaise.
