Couscous Prep for Salad

| 3.00 | cup | LEGOUT® 095 Chicken Base 1 lb 12 x 1 Lb , prepared |
| 1.00 | pc | Cinnamon, sticks |
| 0.30 | tsp | Turmeric |
| 0.50 | tsp | Red Pepper flakes |
Preparation
1. Place 3 cups dry couscous in a 2 inch hotel pan.
2. Bring 3 cups of prepared LeGout 095 Chicken Base to a simmer with 1 cinnamon stick, 1/4 tsp of turmeric, and 1/2 tsp of red pepper flakes.
3. Place couscous in shallow pan. Pour simmering chicken stock over couscous. Cover immediately with plastic wrap for 10 minutes.
4. Remove plastic wrap and fluff couscous with fork.
5. The following items add texture, flavor and interesting appearance. Toss couscous with the following ingredients:
- 1 cucumber, diced
- 3 tomatoes, diced, no seeds
- 2 roasted peppers, red or yellow, in strips
- 1 bunch mint, coarsely chopped
- 1 bunch basil, coarsely chopped
- 1 bunch cilantro, coarsely chopped
- 2 to 3 lemons, rind and juice
- 1/2 cup olive oil
NOTE: This base couscous salad goes well with smoked or grilled meats or fish.
