Baked Polenta
Ingredients (12 portions)

| 6.00 | oz | Yellow Cornmeal |
| 2.00 | oz | Parmesan cheese, grated |
| 0.30 | tsp | White pepper, ground |
Preparation
1. Combine the stock and cornmeal and bring to a boil. Reduce to a simmer and continue to cook for 30 minutes, stirring constantly.
2. Remove from the heat and stir in the Parmesan and pepper.
3. Brush a sheet pan with water and pour the polenta onto the sheet pan. Allow it to cool and then refrigerate until set.
4. Score the polenta into 3-ounce portions. They may be grilled or reheated in an oven before service.
