Chicken and Eggplant with Red Sweet Chili Sauce

Preparation
1. in a saute pan, heat oil and saute chicken until brown. Remove and set aside until ready to use. Hold warm.
2. In the same saute pan, adding more oil if necessary, saute onions until they are transparent. Add garlic and saute for 1 minute.
3. Add eggplants and saute for 2-3 minutes.
4. Return chicken to the pan with the onions and eggplant, add Sweet Chili Sauce, bring to a boil, stirring frequently, reduce heat and simmer for 10 minutes.
5. Garnish with basil and serve with jasmine or basmati rice.
