"Jerk" Red Snapper with Dirty Rice

Preparation
Preheat grill. Preheat oven to 325 degrees.
1. Brush fish fillets with 1 oz of oil. Season with salt and pepper and hold in the refrigerator.
2. In a sauce pan, heat remaining oil, saute all the vegetables until fragrant. Add the cajun seasoning, rice and prepared vegetable base. Place in oven and cook for 20 min or until fluffy.
3. Grill snapper on all sides, brush generously with RTU Jamaican jerk sauce.
4. Serve snapper with dirty rice.
Yield: 2 qts.
