Grilled Salmon with Dill Chive Cream

2.00cupWine, white dry
0.33cupOnions, shallots minced
1.00tbspKnorr Ultimate Roasted Chicken Base 6 x 1 Lb 
1.00qtCream, heavy
8.00ozButter well chilled
10.00pcSalmon fillet (5oz pcs)
  Salt to taste
  Black Pepper to taste
2.00tbspDill chopped
0.25cupChives chopped
  Chives sprigs, to garnish
  Olive oil as needed

Preparation

1. In a saucepan boil together wine and shallots until reduced to 1/3. Add Knorr Ultimate Chicken Base and stir until dissolved.

2. Add cream and boil to thicken to a sauce consistency. Remove from heat and whisk in 4 tbsp. of chilled butter. Return to stove and at low heat, whisk in remaining butter, 1 tbsp. at a time. Hold warm.

3. Brush salmon with olive oil and season with salt and pepper. Grill salmon, turning once.

4. To serve, stir dill and chives into sauce, ladle sauce on plate and place salmon on top. Garnish plate with 2 chive sprigs.
