Arroz De Camarones "Yucatan" (Shrimp and Rice "Yucatan")

| 0.50 | lb | Onions, white chopped |
| 2.00 | x | Bell pepper, green medium size, diced |
| 1.50 | lb | Shrimp 26-30 p.d. |
| 1.30 | qt | Knorr Ultimate Shrimp Base 6 x 1 Lb prepared |
| 0.50 | qt | tomato chopped in juice |
| 0.20 | tsp | Saffron |
| 2.50 | cup | Rice, white |
| Salt to taste | ||
| Black pepper, ground to taste | ||
| Green peas frozen, defrosted, as needed |
Preparation
1. Heat olive oil. Sauté garlic and onions until onions are transparent. Add peppers and cook for 5 minutes. Remove and set aside. In same pan, sauté shrimp until white. Set aside.
2. To the prepared Ultimate Base, add tomatoes, saffron and rice. Cook until rice is done. Add shrimp, green pepper mixture, salt and pepper to taste. Heat through and serve.
3. If desired sprinkle with peas.
