Arroz De Camarones "Yucatan" (Shrimp and Rice "Yucatan")

1.00tspGarlic(1) chopped
0.50lbOnions, white chopped
2.00xBell pepper, green medium size, diced
1.50lbShrimp 26-30 p.d.
1.30qtKnorr Ultimate Shrimp Base 6 x 1 Lb prepared 
0.50qttomato chopped in juice
0.20tspSaffron
2.50cupRice, white
  Salt to taste
  Black pepper, ground to taste
  Green peas frozen, defrosted, as needed

Preparation

1. Heat olive oil. Sauté garlic and onions until onions are transparent. Add peppers and cook for 5 minutes. Remove and set aside. In same pan, sauté shrimp until white. Set aside.

2. To the prepared Ultimate Base, add tomatoes, saffron and rice. Cook until rice is done. Add shrimp, green pepper mixture, salt and pepper to taste. Heat through and serve.

3. If desired sprinkle with peas.
