Smoked Pork Chop with Horseradish Sauce

Preparation
1) Blend steak seasoning mix with brown sugar. Rub both sides of the pork chop with the seasoning blend. Let stand chilled for three hours.
2) Place meat in a smoker, cook until 150 degree internal temperature.
3) Saute shallots in oil, deglaze with white wine, reduce by half. Add demi-glace, cream and horseradish. Reduce until proper consistancy. Finish with whole butter and season to taste.
Note: Could use rack of pork. Serve with a flavored whipped potato or braised white beans.
