Pearl Onion and Chanterelle Sauce for Veal Chop

| 1.00 | cup | Onions, pearl , cooked and peeled |
| 1.00 | cup | Mushrooms, chanterelle , sliced |
| 1.00 | cup | Red wine |
| 1.00 | tbsp | Onions, shallots ,chopped |
| 1.00 | stalks | Thyme |
| 1.00 | cup | tomato , peeled, julienned |
Preparation
1. In saute pan, reduce wine with shallots and thyme. Strain. Reserve.
2. In sauce pan, heat one tablespoon oil and saute sliced chanterelle mushrooms. Add Knorr Demi-Glace, onions, tomatoes and reserved reduced wine. Simmer and season to taste.
