1.00qtTomato concasse , no juice
4.00cupMushrooms, domestic , sliced
3.00flozCanola oil
1.00ptWhite wine, Johannesburg
4.00ozButter
0.50cupItalian Parsley
2.00tbspTarragon leaves ,chopped
2.00cupOnions 1/2" dice

Preparation

1. Heal oil, add onions, saute until tender. Add mushrooms, cook until tender.
2. Add tomatoes, saute a few minutes. Add white wine and reduce by half.
3. Add KNORR Demi Glace and reduce to proper consistency. Finish with chopped parsley, tarragon and whip in whole butter.
4. Adjust seasoning.
