Looing "Master" Sauce

| 1.00 | cup | Soy sauce light |
| 1.00 | cup | Soy sauce dark |

| 0.50 | cup | Sherry dry |
| 5.00 | tbsp | Sugar, granulated white |
| 2.00 | tbsp | Ginger root minced |
Preparation
1. Combine all the ingredients in a non-reactive pot. Bring to a boil to marry flavors. Retain for cooking.
Hint*
This "Master" sauce can be strained and reserved after cooking. Keep refrigerated between uses, and bring to a boil during the cooking process. In China, this sauce has been used for years.
If used in stir fry, add small amount of cornstarch to achieve desired thickness.
Yield: 1-1/2 qts.
