Lone Star Black Bean and Brisket Soup

1.00cupOnion, yellow , chopped
0.75cupCarrots , chopped
1.00tbspGarlic(1) , chopped
1.00lbBeef, brisket , diced
4.00tbspKnorr Ultimate Roasted Beef Base 6 x 1 Lb 
1.00qtTomatoes, canned , diced, drained
0.25cupBarbecue sauce
1.00galWater
  Kosher salt and black pepper to taste

Preparation

1. Soak the beans overnight in water. Drain and rinse well before proceeding.
2. In a large stock pot, saute bacon until crisp.
3. Add onions, carrots, celery, and garlic. Cook until transparent.
4. Add brisket and Knorr Gourmet Beef Base amd cook for 1 minute.
5. Add tomatoes, barbeque sauce, black beans and water. Simmer until beans are tender, approximately 2 hours.
6. Adjust seasoning with pepper.
