Beef Barley Soup

| 1.00 | cup | Carrots , natural cut |
| 0.50 | cup | Mushrooms, domestic , sliced |
| 0.50 | cup | Barley , rinsed |
| 12.00 | oz | Beef round, top (inside) , cooked, small dice |
| 1.00 | cup | Tomatoes, canned , diced, drained |
| 3.00 | qt | Water |
| 0.25 | cup | Knorr Ultimate Roasted Beef Base 6 x 1 Lb |
| 0.50 | cup | Broccoli, florets , blanched |
| Kosher salt and black pepper to taste |
Preparation
1. In a large pot, melt margarine and saute onions, celery, carrots, until tender. Add mushrooms and cook for 1 minute.
2. Add barley, beef, tomatoes, and water. Bring to a boil. Add Knorr Gourmet Edge Beef Base and return to a boil. Simmer for 40 minutes.
3. Add broccoli florets.
4. Add seasoning to taste, and hold for service.
