Avgolemono Soup

| 6.00 | oz | Rice, long grain , rinsed |
| 2.00 | floz | Cream, heavy |
| 4.00 | pc | Eggs |
| 3.00 | x | Lemon juiced and strained |
| 4.00 | cup | Chicken meat , cooked and chopped |
| 1.00 | tsp | Black Pepper |
| 2.00 | tbsp | Italian Parsley , minced |
| 0.50 | tsp | SEASONING SALT |
Preparation
1. Separate the egg yolk and whites. Whisk egg yolks and cream together.
2. Bring broth to a simmer and add rice and cook for 10 minutes. Combine lemon juice and egg mixture.
3. Ladle 3 0z. of hot broth into the mixture to temper. Slowly add the tempered mixture back into the broth and simmer gently for several minutes. Do not boil.
4. Add the chicken and seasonings. Garnish with parsley.
