Chicken Cilantro and Lime Soup

1.00lbchicken breast halves without skin, diced
6.00ozCorn, yellow
4.00ozTomatoes, canned
6.00ozLime juice
  Cilantro , fresh, tied together
1.00cupCilantro , fresh, chopped
1.50qtKnorr select chicken base, prepared 
1.00qtKnorr Ultimate Vegetable vegetarian Base, prepared 
  Tri color tortilla strips, fried - to garnish
2.00tbspSeasoning (salt+ pepper)

Preparation

1. In a large soup kettle, heat corn oil and sweat white onions, celery, garlic, chili powder. About 3 minutes.

2. Add chicken and cook until just about 3 minutes

3. Add prepared Chicken Base, Vegetarian base, corn, tomato, and cilantro bunch and let simmer about 20 minutes. Remove cilantro and discard.

4. Stir in lime juice .

5. Adjust seasoning and consistency. Turn off heat and sprinkle chopped cilantro in soup stir and serve garnished with tortilla strips and Queso fesco cheese.





Yield: 2 1/2 qts.
