Beef, Mushroom and Toasted Barley Soup

| 3.00 | oz | Celery , diced |
| 8.00 | oz | Mushrooms, domestic ,sliced |
| 2.00 | tbsp | Thyme minced |
| 2.00 | lb | Beef for stewing , trimmed, cooked, small dice |
| 1.00 | cup | Tomatoes, canned ,petit cut |
| 6.00 | oz | Barley ,toasted and partially cooked |
| 2.00 | qt | Knorr Select Beef base, prepared |
| 1.00 | qt | Knorr Ultimate Vegetable vegetarian Base, prepared |
| salt and pepper , as needed |
Preparation
1. In a large soup kettle, sauté onions, celery, carrot , thyme and mushrooms until soft and fragrant.
3. Add beef, tomatoes, toasted barley, prepared Beef Base and Knorr Vegetarian Base and simmer around 20 minutes.
4. Ajust seasoning and consistency if desired.
5. Serve hot.
Yield: 3 qts.
