French Lentil and Olive Salad

1.00cupGreen olives , Spanish, pitted and halved
2.00cupTomatoes, plum , small dice
0.50cupItalian Parsley , chopped

  salt and pepper to taste

Preparation

1. Soak lentils overnight in water. Bring to a boil and cook until tender. Drain and cool.
2. Blend with all other ingredients, season to taste.
