Grilled Chicken and Grape Brochette

 
 
 

Ingredients (40 pieces)

16.00ozchicken breast
40.00 Grapes- red seedless , each
6.00xScallions each, cut in 1/2 inch pieces from botom
4.00ozAlmonds slivers , toasted, chopped
8.00ozVinegar , sherry
4.00tbspSugar, granulated white
1.00tspGarlic(1) , chopped
1.00tbspOnions, shallots , chopped
1.00tbspOlive oil

Preparation

1.. Cut chicken into 3/4 " cubes and skewer with a grape and slice of scallion.
2. Make glaze, by sweating garlic, and shallot in olive oil. Add sugar and sherry and reduce by half.
3. Grill skewers, brushing the glaze as you go.
4. Sprinkle with chopped toasted almonds.
5. Serve with Curry or Sherried Dill Mayonnaise.
