Grilled Chicken and Grape Brochette

| 6.00 | x | Scallions each, cut in 1/2 inch pieces from botom |
| 4.00 | oz | Almonds slivers , toasted, chopped |
| 8.00 | oz | Vinegar , sherry |
| 4.00 | tbsp | Sugar, granulated white |
| 1.00 | tsp | Garlic(1) , chopped |
| 1.00 | tbsp | Onions, shallots , chopped |
| 1.00 | tbsp | Olive oil |
Preparation
1.. Cut chicken into 3/4 " cubes and skewer with a grape and slice of scallion.
2. Make glaze, by sweating garlic, and shallot in olive oil. Add sugar and sherry and reduce by half.
3. Grill skewers, brushing the glaze as you go.
4. Sprinkle with chopped toasted almonds.
5. Serve with Curry or Sherried Dill Mayonnaise.
