Bissar Dip with Zahtar

| Pita bread, plain , accompaniment |
Preparation
1. Soak fava beans overnight. Drain the beans, remove their wrinkled skins and place in a large pan with garlic and the cumin seeds. Add enough water to cover the beans and bring to a boil. Boil for 5 minutes, then reduce heat, cover and simmer gently for about 1 hour, or until the beans are tender.
2. While still warm, run the beans through the processor until smooth.
3. Add the mayonnaise and season to taste with salt and pepper.
4. Place the dip in a serving dish and garnish with Zahtar, paprika or thyme.
5. Drizzle on top the olive oil. Serve warm with plenty of pita bread.
